A BAKING champion was thrilled this week as she saw her winning pie go into production at the Humble Pie Company.

Cathy Bird from Burnham-on-Sea won the Great Burnham Bake Off last year at the towns food festival after her pie was scrutinised by a panel of hungry judges. 

Cathy said: "I love making pies and other savoury treats so I jumped at the chance of entering the Great Burnham Bake Off competition.

"To come up with a new pie filling for the Humble Pie Company to put into production was too good an opportunity to miss. 

"After a bit of research at the local farmers' market and their website, I found out which way I was heading with flavours and ingredients. 

"I must have made about 10 different fillings, which my family, work colleagues and husband's workmates were always too happy to try.

"The overwhelming winner of the taste challenge was Moroccan Lamb.  

"I made the pie from scratch on the day of the competition and almost missed the deadline, but made it just in time.

"After a nervous wait the winner was announced by the judging team and to my delight, I won!

"I know it was a good pie, but there were some other great looking and tasting entries so I was genuinely over the moon."

The winning bakers Moroccan inspired pie is now in production and will be available to buy at next week's Burnham farmers market. 

Sarah Milner Simonds, co organiser of Burnham-on-Sea Food and Drink Festival said: "The production facility at The Humble Pie Co was amazing.

"Pauline and her team operate with such exacting standards and seeing the first pies made with Cathy watching over the whole process was a great experience. 

"The company has a great history and now Cathy's pie is a part of this."

Last year's competition was sponsored and co-judged by The Retreat Caravan Park.
