History: Starting out life as a mansion house designed and built by Robert Fell in 1787, the building has seen many changes over its lifetime, but has been a town house mansion hotel for over 50 years. Paying homage to Robert and the building he created, the Cumbria Park Hotel has chosen to honour him by naming their new restaurant Fells.

Style of food: Locally sourced produce is maximised, affording tFells the opportunity to deliver outstanding seasonal modern dishes with a classic twist.

Menu sample: Starters include pan-fried king scallops with roasted butternut squash puree, black pudding and crispy Parma ham (£10.95); game bird ballotine of pheasant, pigeon, partridge, pistachio nuts and apricot wrapped in Parma ham, with textures of beetroot and parsnip crisps (£8.95); twice baked mature Cumbrian cheese souffle with tomato salad, red pepper relish, micro herbs and rocket pesto (£8.95); wild mushroom, butternut squash and spinach risotto with Parmesan shavings and truffle oil (£8.95).

Mains feature Fells lamb trio of Cumbrian lamb - Tatie Pot, lamb cutlet, confit lamb with autumn green vegetables, and shiraz wine and star anise jus (£18.95); locally-sourced maple smoked pork fillet, slow and low belly pork, pork and black pudding fritter, apple fennel chutney, sweet potato puree, pak choi and light oriental BBQ Sauce (£17.95); autumn vegetable and chickpea bon bon with roasted beets, yellow pepper ketchup and green vegetables (£16.95).

Desserts include Lakes Distillery gin and tonic cheesecake, topped with lime curd served with a lemon and lime sorbet (£7.95); sticky toffee pudding with toffee sauce, vanilla pod ice cream and cream (£6.95); baked chocolate, raspberry and pistachio tart with raspberry sorbet, Chantilly cream and confit raspberries (£7.95).
